Cet ap\u00e9ritif aurait \u00e9t\u00e9 propos\u00e9 pour la premi\u00e8re fois par Henri Barabant, maire de Dijon de 1904 \u00e0 1908. Ce dernier a remplac\u00e9 le Champagne par un vin blanc agr\u00e9ment\u00e9 de cr\u00e8me de cassis pour faire des \u00e9conomies.<\/p><\/div><div class=\"news-text-wrap\"><p>Le Chanoine F\u00e9lix Kir, maire charismatique de Dijon entre 1945 et 1968, garda cette tradition lorsqu\u2019il recevait ses convives, en utilisant cependant principalement du Bourgogne Aligot\u00e9. En 1951, il accepte que la maison Lejay-Lagoute, principale productrice de cr\u00e8me de cassis, utilise le nom de &#8220;kir&#8221; pour une r\u00e9clame pr\u00e9sentant un vin blanc au cassis. En effet, cet ap\u00e9ritif poss\u00e8de d\u2019autres noms en fonction des ingr\u00e9dients que l\u2019on y ajoute :<\/p><\/div><ul><li>Le kir royal compos\u00e9 de cr\u00e8me de cassis et de Cr\u00e9mant de Bourgogne<\/li><li>Le communard o\u00f9 l\u2019on utilise du vin rouge<\/li><li>Le marcassin qui allie cr\u00e8me de cassis et Marc de Bourgogne<\/li><\/ul><p>Cette liste demeure non-exhaustive et pourrait \u00eatre compl\u00e9t\u00e9e par d&#8217;autres combinaisons bas\u00e9es sur des sp\u00e9cialit\u00e9s r\u00e9gionales, tel qu&#8217;un kir royal \u00e0 base de Champagne ou de Cr\u00e9mants issus d&#8217;autres r\u00e9gions viticoles.
